Every
step in the process, from planting to bottling, is single-estate sourced,
sustainable, and by hand. There are no additives or shortcuts, and only
reclaimed traditional Brazilian woods are used to rest or age the spirit.

Oxen are used on the hillsides to prevent erosion.
The cane fields are not burned prior to harvesting. Burning enables faster harvesting but produces a negative aroma to the finished product.


Only the heart of each freshly cut cane is pressed shortly after harvesting. The discarded bagasse (fibrous matter) is either burned for fuel in our steam boiler that heats the still, and/or used as a natural fertilizer in the cane fields.

Directly after the cane is pressed, the fresh juice enters the fermentation process for making cachcaça.

After the fermentation process, the mix is distilled in traditional copper alembic stills. The heads and tails are selected out of each batch, leaving only the heart of the spirit.

After distillation, our Cachaça Prata (Silver) rests in stainless steel vats for a minimum of eight months, allowing its unique complexities to blossom while mellowing into a fresh, smooth, and floral spirit.
Our signature Cachaça Ouro (Gold) is meticulously aged for two years in a select variety of traditional native Brazilian wood casks, enhancing its exotic, rich, and vibrant profile."
